We tend to think of summer as the grilling season, but as soon as it is warm enough to be outside, there is no good reason not to fire up the grill and prepare some of the bounty which early spring has to offer. There is no better way to signal the arrival of spring then to get outside and start grilling some of the delicious spring vegetables, which are available in the markets. Snow peas are something that might not immediately come to mind when you are in the mood for some grilled fresh vegetables.
Never the less they are amazing grilled and will quickly become part of your spring and summer grilled vegetable repertoire; these grilled snow peas are simply so good that they may have you getting the grill ready as soon as you start to see them in your local grocery or produce market! This recipe pairs fresh snow peas with cilantro, an herb used extensively in Mexican and Asian cuisine that is a natural match for this vegetable.
Ingredients -
4 cups snow peas
1 tbsp cilantro, finely chopped plus a few leaves as garnish
1 tbsp Olive oil
Salt and pepper, to taste
Preparation:
Start up your grill; while it is getting hot, tear off a sheet of aluminum foil.
You will need a piece, which is about two feet long for this recipe.
From here, it is pretty simple - place your snow peas in the center of the foil, drizzle with olive oil and sprinkle with the chopped cilantro.
Next, fold up the ends and double fold to seal your snow peas into a packet. The idea is that they will steam inside the packet while still getting just a touch of char and flavor from the grill.
Simply place the packet on your grill (which should be medium-hot for this recipe) and allow to cook for about eight minutes.
Remove from the grill and carefully pierce the packet to allow steam to escape. Alternately, you can open the packet while wearing oven mitts.
Add salt and pepper to taste, garnish with a few cilantro leaves, and serve at once.
You may never add snow peas to your stir-fries again, since you’ll be rushing to the grill as soon as you bring them home - yes, these are that good.
