Ingredients -
2 red bell peppers
2 yellow bell peppers
¼ cup extra virgin olive oil plus more for drizzling
4 cloves garlic, finely minced
1 ½ cups diced bread slices (to make croutons)
1 ¼ cups mozzarella in small cubes
2 tablespoons grated parmesan
½ teaspoon dried oregano
2 tablespoons chopped fresh basil
Salt and black pepper
Pinch of red pepper flakes
Preparation:
Preheat the grill to medium.
Sauté the diced bread in a skillet in 1 tablespoon of the oil with the red pepper flakes, garlic, and basil for about 4 minutes to make herby croutons.
Add the mozzarella and toss to combine.
Season with salt and pepper.
Remove the tops from the bell peppers, leaving them whole. Take the seeds and cores out. Rub olive oil over the peppers and combine the remaining oil with the mixture in the skillet.
Fill the peppers with the cheese mixture and put the tops back on.
Grill the peppers over an indirect heat.
