Grilled Vegetables Hero Sandwich Recipe

The hero sandwich is a classic; people everywhere love these filling sandwiches whether they call them a hero, a sub, or a grinder. You can put almost anything between two slices of bread and make a pretty decent sandwich, but it takes great ingredients to make a truly spectacular one. With that in mind,

I give you this grilled vegetable hero sandwich filled with grilled red peppers, eggplant and zucchini topped with mozzarella cheese. This is a sandwich, which even the most confirmed carnivores among us could gladly sink their teeth into. The grilled eggplant, mozzarella cheese, and chewy hero roll give this sandwich plenty of bite to go around. These are terrific topped with a little olive oil, vinegar, salt and pepper or any sandwich spread you prefer.

Grilled Vegetable Hero Sandwich

Ingredients - 4 hero rolls (white or whole wheat)
1 large eggplant, sliced into ¼ inch thick rounds
2 red peppers, halved
1 large zucchini. Sliced into thin strips lengthwise
Mozzarella cheese - 8 good sized slices
Olive oil
Vinegar
Salt and pepper, to taste

Preparation:

Start by slicing your vegetables and mix up a little oil and vinegar in a bowl (a little extra is fine, since it makes a great dressing for the sandwiches).

Brush the eggplant and zucchini slices with this mixture and grill your peppers, zucchini, and eggplant. These will not all finish at the same time, so keep an eye on your veggies and get them off the grill once they’re ready - the zucchini will take 3-4 minutes per side, the peppers and eggplant 7-8 per side. Once they are grilled, bring them back inside, and put together your sandwiches!

Pile each roll with eggplant and zucchini slices and once they are cool enough to handle, slice your grilled peppers into thin strips and place these one your sandwiches as well before topping with mozzarella cheese slices.

Now it is time to take your sandwiches back outside for a few minutes in the grill - this will get the cheese melted just right and toast the rolls to perfection. 3-4 minutes on the shelf in your grill (while closed) is about right - check your sandwiches halfway through - these are too good to burn!

Once they are ready, get them inside pronto, dress with a little oil and vinegar, salt, and pepper to taste and watch these incredible sandwiches disappear.
