Herby Citrus Vegetable Marinade

If making easy marinades appeals to you, the fresh flavors in this lemon, garlic and herb marinade will be sure to please your palate. This refreshing citrus marinade adds plenty of flavor to any vegetables you want to marinate and if you are serving grilled fresh vegetables as a side dish to fish, this marinade will complement the whole meal.

Alternatively, you can use this pure citrus and herb marinade for grilled vegetable kabobs or for any grilled mixed vegetables recipe. Limejuice works nicely if you have that rather than lemon juice and it adds a slightly different flavor, which is equally tangy and refreshing.

Garlic, Oregano, and Lemon Marinade

Ingredients -

½ cup olive oil
2 teaspoons salt
2 cloves garlic, crushed
1 ½ teaspoons dried oregano
1 ½ teaspoons fresh parsley
1 teaspoon freshly ground black pepper
3 tablespoons fresh lemon juice

Preparation:

Combine the marinade ingredients in a small bowl and stir well.

Place the prepared veggies in a 2-gallon Ziploc bag and add the marinade. Seal the bag and turn it over to coat everything.

Leave to marinate in the refrigerator for a couple of hours.
