Curry Marinade for Grilled Vegetables

This curry marinade uses curry powder, ginger and cinnamon for flavor and orange juice and garlic to make it unusual. Curried vegetables are delicious and complement a piece of grilled steak or grilled fish. A lot of marinade recipes call for the vegetables to be marinated for an hour or more but, with this one, you can decide how strong you want the curry flavor to be and adjust the marinating time accordingly.

If you use half lime juice and half orange juice, rather than all orange juice, your curry marinade with have a tangy kick to it. Vegetables such as cauliflower, potato and carrot are good ones to use in your vegetable assortment when using this curry marinade.

Curry Marinade

Ingredients -

2 tablespoons curry powder
3 tablespoons balsamic vinegar
1 tablespoon honey
½ teaspoon black pepper
½ teaspoon ground cinnamon
4 cloves garlic
2 tablespoons orange juice
1 tablespoon minced fresh ginger

Preparation:

Mix all the ingredients together well.

Pour this marinade over chopped vegetables and let them marinate in the refrigerator for an hour or more.

You can make this marinade in advance and use it later or let the vegetables marinate overnight.

Preheat the grill to a moderate heat and cook the vegetables until they are tender.
