If you like to make easy marinades for your grilled vegetables, you might like the following recipe but bear in mind it is very spicy so you can reduce the amount of chilies if you do not like your food too fiery!
You can use this herby, spicy marinade with lots of different easy grilled vegetable recipes because the flavors suit most vegetables. The orange juice and lime juice goes nicely with the spicy flavor but also adds fruitiness to counteract the sharp chili taste. The herbs add an aromatic flavor and soften the overall taste of this marinade.
Ingredients -
5 oz hot chilies (Serrano or scotch bonnet)
2 tablespoons fresh thyme
2 tablespoons fresh basil
2 tablespoons fresh rosemary
2 tablespoons mustard seed
2 tablespoons fresh parsley
2 tablespoons fresh thyme
2 tablespoons white vinegar
2 teaspoons salt
2 tablespoons orange juice
¼ cup lime juice
Preparation:
Blend all the ingredients together until you have a smooth marinade and use it to marinade 2 lb vegetables overnight, and then grill them the following day over an indirect heat.
