The combination of olive oil, vinegar, garlic, oregano and more adds a piquancy and plenty of flavor to the grilled eggplant and the great thing about this marinade is that you can pickle the eggplant in it and keep it in an airtight jar for several months. Ingredients -
2 tablespoons olive oil
1 small onion, finely chopped
¼ cup oregano leaves
1 clove garlic, crushed
1 tablespoon red wine vinegar
Salt and black pepper
Preparation:
Combine the ingredients together; add grilled eggplant and leave to marinate overnight in the refrigerator or for up to 3 months in an airtight jar in the refrigerator.
