Ingredients -
1 package cherry tomatoes
1 teaspoon salt
1 cup extra virgin olive oil
2 crushed cloves garlic
½ teaspoon black pepper
⅓ cup wine vinegar
2 teaspoons oregano leaves
½ teaspoon dry mustard
Preparation:
Poke a couple of holes in each cherry tomato with a toothpick, and then put them in a glass dish.
Shake the vinegar, oil, salt, pepper, garlic, oregano, and mustard in a well-sealed jar to mix, and then pour this mixture over the cherry tomatoes.
Cover and refrigerate for a few hours then thread the cherry tomatoes on to skewers.
Grill them over a moderate heat, turning them when necessary.
When they are hot and slightly charred, they are done.
You can serve the remaining marinade as a sauce if you like.
Add some snipped fresh parsley and minced green onion to it if you are going to do that.
