This is an easy marinade made from herbs, red wine, olive oil and seasoning. It is great with any combination of grilled vegetables. You can use organic herbs or regular herbs but organic herbs tend to have a stronger flavor. Oregano goes very well with tomatoes so you might like to use some tomatoes in your grilled vegetable combination.
Thyme goes perfectly with just about any mixture of vegetables. Fresh herbs are better in this recipe than dried herbs, both for their softer texture and fresher flavor. The longer you refrigerate your vegetables in this marinade, the stronger the herb flavor will be.
Ingredients -
1 teaspoon salt
1 tablespoon chopped fresh thyme
¾ cup olive oil
1 teaspoon sugar
⅓ cup red wine vinegar
1 tablespoon chopped fresh oregano
½ teaspoon black pepper
Preparation:
Mix everything together well.
Pour this marinade over vegetables and chill for an hour or more.
Grill the marinated veggies over a low to medium heat.
Cooking them slowly stops them from charring.
You can brush extra marinade on to the vegetables as they cook for a stronger flavor.
(Makes 1 Cup Organic Herb Marinade)

Pronounced: (n. mar é naid“; v. mar é naid“)
Liquid made up of different seasonings commonly containing wine, vinegar, oil, herbs and various spices etc. used to soak meat, fish, vegetables and a like in for a period of time as to tenderize and flavor them.
Best when planed a head for ample soaking time and tenderizing time so it has time to brake down the food being soaked in it. Especial nice on cheaper cuts of meat, as it will actually make these as tender as some more expensive cuts.
