Ingredients -
1 chopped red bell pepper
1 chopped yellow bell pepper
1 zucchini, cut into 1 inch slices
1 bottle Italian vinaigrette
6 oz button mushrooms
1 chopped red onion
4 slices bread, buttered on both sides
Preparation:
Stir the vinaigrette and vegetable pieces together and chill the mixture in a covered glass dish in the refrigerator for 3 hours.
Drain the vegetables but keep the marinade.
Thread the marinated vegetables on to skewers and grill the kabobs for 10 minutes over a medium heat.
Turn them a few times during the grilling time and baste them with the Italian vinaigrette marinade.
Grill the buttered bread just long enough to give it grill marks.
