Grilled Cut Vegetables on Skewers

There are few things, which are more evocative of summer more strongly than fresh vegetables cut and skewered for the grill. Vegetable kebabs are mouth watering and easy to make. They make a terrific light meal on their own and are the ideal accompaniment to a wide variety of other grilled dishes, as well as being great tossed into your summer salads.

Peppers and onions are a staple of grilled vegetable kebabs, but do not be afraid to get creative here - zucchini and yellow squash, mushrooms and eggplant all make great additions to your skewered vegetable creations. We will cover a very simple recipe here for delicious vegetable kebabs - there’s really no ingredients needed other than the vegetables themselves, so make sure to buy or pick fresh (preferably organic) vegetables for this dish, which really lets their natural flavors shine through.

Grilled Cut Vegetables on Skewers A Classic Summer Side Dish

Ingredients -

1 large onion
2 bell peppers (any color)
1-2 Italian frying pepper
Poblano peppers are also wonderful grilled (they’re only very slightly spicy, so go ahead!)

Preparation:

Cut vegetables into approximately 1" square pieces and skewer, alternating onion with peppers.

Grill to desired doneness, turning every 1-2 minutes. Enjoy!
