Ingredients -
1 green bell pepper, de-seeded and cut into strips
1 red bell pepper, de-seeded and cut into strips
1 minced clove garlic
1 chopped red onion
2 lbs frozen bread dough
8 oz shredded Monterey Jack cheese
½ teaspoon Cajun seasoning
1 tablespoon plus 1 teaspoon olive oil
1 teaspoon salt
½ teaspoon black pepper
Preparation:
Thaw out the dough and divide it into 4 equal portions.
Roll each one out to make a ¼ inch thick round.
Brush them with a tablespoon of the olive oil and grill them on one side for 3 minutes.
Sauté the garlic, bell peppers, and onion with the Cajun seasoning in the remaining oil until tender.
Spread this mixture over the cooked sides of the 4 pizza crusts.
Sprinkle the cheese on top and add salt and black pepper.
Grill the pizza for about 4 minutes or until the cheese has melted.
