Garlic and Cheese Eggplant Pizza Recipe

A pizza recipe with eggplant is a good idea if you are looking for interesting grilled pizza recipes. The following eggplant pizza is flavored with garlic, parmesan, cherry tomatoes, and mozzarella. Grilled red bell pepper adds color as well as more flavor. Eggplant Pizza with Tomatoes and Bell Pepper

Ingredients -

1 lb pizza dough
¼ cup extra virgin olive oil
1 sliced eggplant
¼ cup grated parmesan
8 halved cherry tomatoes
2 minced cloves garlic
8 slices mozzarella
1 red bell pepper, de-seeded and quartered

Preparation:

Stir the garlic and oil together in a bowl.

Divide the dough into 4 portions.

Roll each portion into an 8 inch disk and brush some of the garlic oil over them.

Put the dough on a medium high grill, oiled side down, and close the lid.

Cook the dough for 5 minutes or until it is golden brown.

Brush some garlic oil over the red pepper quarters and eggplant slices and grill them until tender.

Cut the bell pepper quarters into strips.

Turn the pizza crust over and top it with the mozzarella, eggplant, bell pepper strips, tomatoes and parmesan.

Close the lid and cook the pizza for 5 more minutes or until the toppings are done and the cheese has melted.
