The wonderful thing about grilled gourmet pizza recipes is that they are tasty enough not to need spices, herbs, or extra seasonings. Of course, people might add salt and pepper afterwards, according to their gourmet pizza taste preference.
Sometimes leaving the pizza simple, using just vegetables and cheese, means the flavor of the vegetables in your vegetable pizza recipe will really shine through. This gourmet pizza is very tasty, thanks to its mouthwatering combination of garlic, spinach, onion, tomato, corn, and two types of cheese.
Ingredients -
1 lb pizza dough
2 tablespoons olive oil
2 tablespoons minced garlic
½ lb spinach
4 oz crumbled feta cheese
8 shaved Parmesan strips
½ onion, thinly sliced
1 tomato, not too ripe, thinly sliced
½ cup cooked corn kernels
Preparation:
Start a medium hot fire in the grill. Steam the spinach for 3 minutes or until just wilted. Drain well. Taking a handful of spinach at a time, squeeze out all the water and chop it coarsely. Lightly oil the grill rack. Stretch the dough to fit the grill rack and place the rack over the fire. Grill the pizza dough until the bottom is browned. This will take about 5 minutes.
Remove the grill rack and brush the top of the pizza with olive oil. Flip it over and brush oil on the other side. Scatter half the minced garlic over the browned crust. Sprinkle half the feta over, then half the onion, all the tomato slices, half the corn (see our) How to Grill Corn on the Cob recipe for a lovely grilled corn taste, (just grill per recipe then take a knife and scale the corn off the cob), and half the spinach.
Return the pizza, still on the rack, to the grill. Cover and cook for 5 to 8 minutes, checking the crust after 5 minutes. If the pizza is cooking too fast, turn the heat down or move the rack to a cooler spot. Remove the pizza rack and add the remaining ingredients, finishing with the shaved Parmesan pieces, before returning to the grill until all the ingredients are hot and the cheese has started to melt.
