Grilled Margarita Pizza

You have plenty of choice when making a vegetable pizza recipe. A vegetable pizza could be a tomato and baby spinach pizza, a mushroom and spinach pizza or a cheese and tomato pizza with herbs. Tomato pizza does not have to be boring and you can use either fresh, canned or sun-dried tomatoes depending on the flavor and texture you want.

Spinach pizza recipes are very popular and spinach goes wonderfully with the two different cheeses in this spinach pizza recipe. Classic pizza margarita uses cheese and tomatoes but this grilled pizza recipe features capers for a touch of saltiness and spinach because it is so delicious.

Grilled Pizza Margarita Recipe with Spinach and Capers

Ingredients -

1 lb homemade or shop bough pizza dough
½ cup virgin olive oil
¼ cup spinach
1 cup shredded Fontina
4 tablespoons freshly grated pecorino Romano
1 teaspoon minced, fresh garlic
2 tablespoons canned, large capers
1 cup chopped canned tomatoes in a heavy puree

Preparation:

Prepare a hot fire, setting the grill rack 3, or 4 inches above the coals.

Steam the spinach for 3 minutes until just wilted. Squeeze the water out, a handful of spinach at a time and chop it coarsely. Spread and flatten the pizza dough on a large, oiled baking sheet until it is a 12-inch diameter circle. Alternatively, you can make a rectangle. Make sure the thickness is even. When the fire is hot, lift the dough gently by the corners closest to you and drape it over the grill. Catch the loose edge on the grill first and slide the rest into place. The dough will puff within a minute and the underside will stiffen.

Flip the crust over with tongs on to the coolest part of the grill and brush the grilled surface with oil. Scatter the garlic and cheeses over the dough and spoon the tomato over the cheese, without covering the whole pizza with tomatoes. Arrange the spinach over the pizza. Scatter over the capers and drizzle a couple of tablespoons of olive oil over the top.

Slide the pizza back towards, but not directly over, the hot coals. Use tongs to frequently rotate the pizza so it cooks evenly and check the underside every few minutes so it does not burn. When the cheese is melted and the top is bubbling, the pizza is done. The cooking time will be about 7 or 8 minutes. Serve immediately.
