Grilled Vegetarian Pizza - Mushrooms and Red Onion

There are so many wonderful ingredients you can choose from if you want to make a truly mouthwatering vegetarian pizza - mushrooms, tomatoes, onion, spinach, zucchini, eggplant and bell peppers are just some of the toppings you might like to consider for your vegetarian grilled pizza recipes. When making grilled pizzas it is very important to ensure your grill grate is clean before you start, so the dough does not become flavored with whatever else you have been cooking on there.

You can halve the following recipe if you do not have so many people to feed. If you are making your own pizza dough and you make three pounds of it, you can dip each dough ball in a greased bowl and roll it around. Then put each ball of dough into a separate Ziploc bag and freeze it. Pizza dough will keep in the freezer for up to three months. Let them thaw in the refrigerator overnight before using them.

This pizza recipe features onion, mushrooms, garlic, spinach, oregano and more, for a complex flavor. Everything goes well together and this can be classed as a gourmet vegetarian pizza recipe because of the fresh ingredients and the amazing flavor of the finished pizza.

Red Onion and Mushroom Pizza with Oregano

Ingredients -

3 lbs pizza dough
8 oz white or cremini mushrooms, in ¼ inch slices
1 thinly sliced red onion
2 oz crumbled parmesan
2 cups tomato sauce
1 tablespoon chopped fresh garlic
2 tablespoons extra virgin olive oil
6 oz grated mozzarella
4 oz fresh spinach
2 teaspoons dried oregano
Salt and black pepper, to taste
Cornmeal, as needed

Preparation:

Divide the dough into 4 equal sized pieces.

Preheat the grill to high.

Add the oil to a skillet and heat it over a moderate heat.

Sauté the mushrooms for about 6 minutes in the oil or until they are soft.

Add the garlic and cook for another minute. Season with salt and pepper.

Dust a baking sheet or pizza pan with cornmeal. Roll a dough ball into a 12 inch round, on a floured surface and transfer it on to the baking sheet or pizza pan. Repeat with the other dough balls, transferring them to 3 other baking sheets or pizza pans.

Slide one of the pizza crusts on to the middle of the grill grate and grill it for about 2 minutes or until it is golden brown.

Turn it over and add some of the pizza sauce, then some of the mushroom mixture, spinach, and mozzarella.

Add some onions, parmesan, and oregano.

Keep grilling the pizza for another 3 minutes or until the crust is cooked through.

Slide the pizza back on to the pizza pan, then cook the remaining pizzas in the same way.
