This is a delicious grilled asparagus recipe and the asparagus goes perfectly with yogurt sauce. It is up to you whether you combine the asparagus with the sauce, pour it over or serve the two separately, so you have a dipping sauce. If you are serving them mixed together, this grilled asparagus recipe is great served on a bed of lettuce, mixed with cherry tomatoes and parsley.
Grilled asparagus with yogurt sauce can be an appetizer, a side dish to a main course or a salad if the asparagus is chilled after cooking. The lemon juice, dill and garlic used in the marinade bring out the wonderful asparagus flavor. It is an extremely versatile recipe and can even be used as a sandwich filling.
Ingredients -
1 lb asparagus
2 crushed cloves garlic
¼ cup olive oil
1 ½ teaspoons dried dill
3 tablespoons lemon juice
Salt and black pepper
For the Yogurt Sauce:
1 teaspoon chopped fresh chives
2 teaspoons minced fresh parsley
1 cup plain yogurt
⅛ teaspoon cayenne pepper
½ teaspoon crumbled dried tarragon
1 teaspoon Dijon mustard
¼ teaspoon salt
½ teaspoon sugar
¼ teaspoon paprika
Preparation:
Combine all the yogurt sauce ingredients and chill the mixture for an hour.
Snap the woody ends off the asparagus and discard them.
Mix the olive oil, lemon juice, dill, salt, pepper and garlic in a bowl.
Put the asparagus in a dish and pour the olive oil mixture over it.
Leave it to marinate for an hour.
Preheat the grill to a moderate heat.
Grill the asparagus in a grilling basket or directly over the coals until tender.
You can either serve the yogurt sauce as a dip or toss the grilled asparagus in it just before serving.
