Zucchini is an incredibly versatile vegetable; which is a good thing since many gardeners find that they simply have too many of this summer squash around come mid-summer. In order to use up all of these nutritious and adaptable vegetables, you need to have a lot of different zucchini recipes; and grilled zucchini recipes should be a part of every cook’s repertoire.
This mouthwatering grilled zucchini recipe takes zucchini rounds marinated in an herbed Italian dressing and cooks them to slightly charred perfection on a hot stone. A pizza stone makes an excellent stone for grilling zucchini this way (available at any cookware specialty shop and some department stores). This is a recipe that might just have you actually keeping pace with your prolific zucchini plants.
Ingredients -
2 medium zucchini
1 cup Italian dressing
2 cloves garlic, finely minced or crushed with a garlic press
1 tsp black pepper
1 tsp fresh or dried thyme, oregano, basil or marjoram (or any mixture of the above)
Preparation:
You will need to prepare this dish ahead of time, since the zucchini needs to marinate for at least 4 hours; overnight is best if possible. Place your stone on a hot grill and allow to heat for about 10 minutes before adding your zucchini slices *.
Grill zucchini for 6-8 minutes per side (the time will vary from pizza stone to pizza stone and from grill to grill.
The zucchini will take on a lovely char and will smell simply amazing - zucchini absorbs marinades very well.
Serve hot - this great grilled zucchini recipe will not last long on the table, so you may want to be prepared to make another batch!
* Some pizza stones may crack when exposed to flames, so if buying a pizza stone, check its temperature rating first - alternately, you can place your pizza stone on top of fireplace bricks to prevent it from being directly exposed to the grill’s flames.
