In the height of summer, vegetables abound in the garden and none is more productive than zucchini. Many gardeners find keeping up with all of the zucchini, their plants produce to be a challenge. Summer menus are often filled with stir-fried zucchini, zucchini soup, and stuffed zucchini and of course zucchini bread.
One great way to enjoy this vegetable is by grilling it. Grilled zucchini is incredibly easy to prepare and can be eaten all by itself, added to salads or sandwiches and cut up and added to vegetable kebobs. This grilled zucchini recipe is incredibly simple and quick to prepare - and it is a good way to use up some of that zucchini that is rapidly filling up your kitchen. Hot from the grill, zucchini might disappear more quickly than you think.
Ingredients -
2 medium zucchini
Olive oil
Salt and pepper, to taste
Preparation:
This is an exceptionally simple grilled zucchini recipe to prepare - so fire up the grill and get things going; you will be eating before you know it! Slice your zucchini into 1/8 slices lengthwise, brush with olive oil and sprinkle with a little salt and a generous amount of fresh ground black pepper.
Once the grill is hot, you are ready to begin grilling.
Grill your zucchini slices for 5 minutes per side and turn carefully as they will be rather soft.
Serve hot as a side dish or incorporate them into salads, sandwiches or other recipes. If serving on their own, these grilled zucchini slices are delicious with a splash of balsamic vinegar.
