Grilled Asparagus Salad

 
 
Asparagus is rich in vitamins A, C and K as well as being delicious. It is usually steamed or boiled but this asparagus salad uses grilled asparagus which has grill marks on and blends it with tomatoes, mozzarella, basil and some other tasty ingredients.

Asparagus is best cooked until it is tender but not soggy. Asparagus salad is quite unusual and makes a very good side dish. This grilled asparagus recipe is good served warm or cold and complements many different grilled recipes. Lemon, vinegar and seasonings finish off this tasty dish. Any asparagus lover will be delighted with this unique asparagus salad recipe.

 

Grilled Asparagus Salad with Tomato and Mozzarella Balls

Ingredients -
 
6 to 8 jumbo Fresh Asparagus Spears
1/2 cup Grape Seed Tomatoes, halved
6 - 1/2 ounce Mozzarella Balls, cut in half
2 tablespoons Fresh Basil, thin sliced
1 tablespoon Extra Virgin Olive Oil
Salt, to taste
Fresh Ground Black Pepper, to taste
Juice of 1/2 Lemon
1/4 cup Balsamic Vinegar (reduced over medium heat to 1/8 cup)
 
Preparation:
 

Cut woody part of stalks asparagus, place in boiling water and cook for 3 minutes. Chill. Before serving, grill on barbecue grill for 1 minute (to make "grill marks").

Combine tomatoes, basil, mozzarella balls, olive oil, salt and pepper and lemon. Place on top of asparagus and drizzle sparingly with balsamic vinegar over the top.
