Grilled Potato Salad Recipe

Potato - po·ta·to

Pronounced: (pé tá tő), n., pl. -toes.

Sometimes called Irish potato, as in white potato. also comes in red, purple and sweet potato verities, It is the edible tuber of Solanum tuberosum plant of the nightshade family and is cultivated in many places around the world in various forms including the continents of North and South America, Europe, Asia, Australia and Africa. Also a designation of the plant itself.

 

 

Grilled Potato Salad

Ingredients -

2 pounds New Potatoes (14 to 16)
1/2 medium Red Onion, very thinly sliced
1/3 cup Extra Virgin Olive Oil
1/3 cup chopped Fresh Parsley
1 tablespoon chopped Fresh Oregano Leaves
1/2 teaspoon Salt
Fresh Ground Black Pepper
2 Cloves Garlic, finely chopped


Preparation:

Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Cook 15 minutes; drain and cool. Cut potatoes in half. Spray with cooking spray. Alternatively can by spritzing with Extra Virgin Olive Oil as a non-stick coating for extra flavor.

Preheat grill to medium heat. Grill potatoes 5 to 10 minutes or until tender. Allow to cool. Cut potatoes into bite size pieces.

Gently mix potatoes and remaining ingredients by tossing in a large bowl. Serve in individual bowls with your favorite grilled or barbequed main dish. Maybe served hot or cold depending on personal preferences.
