Grilled Tomato Basil Soup Recipe

 
 
This tomato basil soup recipe uses vine-ripened tomatoes, which are left to ripen on the vine. This allows their sugars to develop and gives them a more intense flavor and a deep red color. Vine-ripened tomatoes are rich in vitamin C, vitamin E and lycopene which is an antioxidant.

In this tomato soup recipe, the tomatoes are grilled before being combined with delicious ingredients such as garlic, oregano and chili flakes and parmesan cheese. The soup is served over a whole grilled tomato. This tomato basil soup recipe is very tasty and results in a warming soup which is perfect served as an appetizer with warm crusty bread

 

A Tomato Basil Soup Recipe with the Flavor of the Grill

Ingredients -
 
For the Kebabs:

12 Vine-Ripened Tomatoes
2 tablespoons Olive Oil
2 Cloves Garlic, peeled and smashed
3 cups Vegetable Stock
1 cup Tomato Juice
Pinch of Dried Chili Flakes
pinch of Sugar
Sea Salt
Fresh Ground Black Pepper
2 tablespoons Fresh Grated Parmesan
1 tablespoons Oregano Leaves
1 tablespoons Extra Virgin Olive Oil 3 Sprigs of Fresh Basil Leaves Chopped Coarsely

 
Preparation:
 

Heat the grill. Brush the tomatoes with a little of the olive oil and grill for 15-20 minutes until the skin scorches and starts to peel. Leave to cool slightly.

Reserve 4 tomatoes for serving. Peel and roughly chop the rest, saving the juices and discarding the peel. Combine the flesh and juices in a saucepan with the remaining olive oil, garlic, stock, tomato juice, chili flakes, sugar, sea salt and pepper.

Simmer for about 15 minutes. Season to taste and take out the garlic.

Place the 4 reserved tomatoes in four warm bowls and ladle the soup over the top.

Scatter with some parmesan and oregano leaves. Finish by garnishjing with the fresh chopped basil, then drizzle with the extra-virgin olive oil and serve.
