Grilled Vegetable Medley
Ingredients -
3 tablespoon Olive Oil
2 Cloves Garlic, minced
1 teaspoon chopped Fresh Thyme
1 teaspoon chopped Fresh Sage
1 teaspoon chopped Fresh Rosemary
2 small Eggplant, halved lengthwise
2 Zucchini, halved lengthwise
2 Yellow Squash, halved lengthwise
4 Red Onion, sliced 1/4 to 1/2 inch thick
1 Red Bell Pepper, seeded and quartered
Salt
Fresh Ground Black Pepper
Preparation:
Combine olive oil, garlic, thyme, sage, rosemary, in small bowl. Place vegetables
in baking pan and brush with oil mixture. Let marinate at least 2 hours, preferably
overnight.
Grill vegetables directly over medium heat. Season vegetables with salt and pepper.
Grill until just tender, approximately 4 minutes per side.
