Organic Herb Marinade

 
 
This is an easy marinade made from herbs, red wine, olive oil and seasoning. It is great with any combination of grilled vegetables. You can use organic herbs or regular herbs but organic herbs tend to have a stronger flavor. Oregano goes very well with tomatoes so you might like to use some tomatoes in your grilled vegetable combination.

Thyme goes perfectly with just about any mixture of vegetables. Fresh herbs are better in this recipe than dried herbs, both for their softer texture and fresher flavor. The longer you refrigerate your vegetables in this marinade, the stronger the herb flavor will be.

 

Our Herb Marinade Featuring Fresh Grown Organic Herbs

Ingredients -
 
For the Kebabs:

3/4 cup Olive Oil
1/3 cup Red Wine Vinegar
1 tablespoon chopped Fresh Oregano Leaves
1 tablespoon chopped Fresh Thyme Leaves
1 teaspoon Salt
1 teaspoon Sugar
1/2 teaspoon Fresh Ground Black Pepper

 
Preparation:
 

Combine all of the ingredients in a medium bowl and blend well.

In casserole dish pour marinade over vegetables of choice and refrigerate for at least one hour. Grill vegetables over a medium to low heat or coals. The secret here is to let them cook slowly to prevent burning or blackening. Brush on extra marinade occasionally to add a deeper flavor.

Marinade mar·i·nade

Pronounced: (n. mar é naid´; v. mar é naid´),

Liquid made up of different seasonings commonly containing wine, vinegar, oil, herbs and various spices etc. used to soak meat, fish, vegetables and a like in for a period of time as to tenderize and flavor them.

Best when planed a head for ample soaking time and tenderizing time so it has time to brake down the food being soaked in it. Especial nice on cheaper cuts of meat, as it will actually make these as tender as some more expensive cuts.
